Director & Executive Chef

Fernando’s passion for cooking began from a very early age. His style of cooking was originally inspired by his upbringing and travels. Srilanka, India, Spain, Singapore and the Middle East are just some of the places that have influenced the food creation of today. He also takes inspiration from his Spanish wife. They love to explore various parts of Spain and its gastronomy. As well as visiting Michelin star restaurants such as the popular Etxanobe in Bilbao, before coming home and injecting fresh new ideas intonew and tasty dishes.After achieving a diploma in Hospitality, and a Master’s degree in Food Innovation, covering product development, nutrition, public health and microbiology, Fernando began working as a chef in highly rated 5* hotels and restaurantsincluding the hotels chains Hilton, Mercure and Guoman.

Before opening his own catering company, Fernando was also an Executive Chef at the famous Leeds Castle, and previously the Director Dining Executive Chef for Diageo in Park Lane. Cooking has always been his passion, and it is clearly represented in the food created.Fernando is on hand to offer a range of services including catering for weddings and a variety of events.He can provide delicious menus and a personalized service to suit you and your guests’requirements, additionally offering the ability to cater for a variety of different cuisines. Fernando is also known for creating fantastic vegan dishes.Fernando is quirky, confident in his knowledge of food and is an incredibly relaxed individual. No event is too big to handle!



Amanda is an Award-winning BA Hons qualified Event Manager, with an exemplary career within hospitality spanning the last 13 years. Amanda was born and raised in Kent. Her passion is food and with her extensive travelling experience she has been lucky enough to taste many wonders of the culinary world. Her top favourites so far freshly caught BBQed Kangaroo in the outback of Australia, freshly caught lobster on the coast of Devon, traditional rice dishes on the street of Thailand. Utilising her passion for events, food and beverage, she has achieved numerous promotions into roles of progressive responsibility, within large corporate contract caterers including CH & Co and Compass. At elite venues such as Leeds Castle, Hever Castle, Wimbledon, Ascot, she has relished in all aspects of running largescale restaurants and events, and even spent a proportion of her career developing catering within education at Westminster School and St Pauls School. With Amanda’s extensive experience in strategic planning, operational efficiency, team building and project management, and Fernando’s culinary innovation and expertise, they are the perfect match to create culinary and event magic!
